Applesauce Cake

This is an delicious and easy cake to make. It is moist and sweet enough not to need icing. It's always a hit at gatherings and luncheons. You can also make it in a loaf pan.


2 1/2 cups flour, sifted
2 cups sugar
1/4 tsp baking powder
1 /2 tsp salt
1 1/2 tsp baking soda
3/4 tsp cinnamon
1 1/2 cup applesauce
1/2 cup shortening
2 eggs
1 cup raisins, golden preferred
1/2 cup peacans or walnuts, chopped
powdered sugar

Sift the dry ingredients together in a large mixing bowl. Add the applesauce, shortening, and sugar. Beat together for 2 minutes. Add the eggs, and mix well for another 2 minutess. Stir in the raisins, and nuts (if using). Pour into a greased and floured 9" x 13" baking dish (or use non-stick cooking spray).

Bake 55 to 60 minutes at 350 degrees, or until a toothpick comes out clean. Sprinkle with powdered sugar and serve.
