Banana Bread
( Back to Cookbook Main Menu | Back to Breads | Back to Dessert Breads )

Another delicious family recipe from Frances Hamilton's cookbook. This one's for your old-fashion traditional banana bread. Great for breakfast and desert, or a late snack with a big glass of milk.

1 stick margrine
1 cup sugar
2 eggs (separated)
2 mashed ripe bananas
1/2 cup buttermilk
1 tsp. baking soda
2 cup flour
pinch of salt

Preheat the oven to 350 degrees.

Cream the margrine and sugar together. Add the egg yolks, mashed bananas, buttermilk and baking soda. Gradually mix in the flour and salt.

Beat the egg whites to stiff peaks, then fold the egg whites into the dry ingredients. Bake in a buttered and floured loaf pan 1 hour.
