Betty's Venison Chops

Mom had a great venison recipe, that we have been trying to reproduce. This one isn't anything like hers. But it it very good. It has kind of a barbecue flavor

The important part of this recipe is not to over cook the venison. This also works well with turkey cutlets.


4 venison chops or thick steaks (1 1/2 to 2 lbs)
1/4 tsp onion salt
1/2 tsp salt
1/4 black pepper
3 tbls flour
4 tbls vegetable oil
1/2 cup ketchup
1/2 cup cider vinegar
1/2 tsp garlic salt
1 tsp liquid smoke
1 tbls Worcestershire sauce
1 dash hot sauce

Mix together onion salt, salt, pepper, and flour. Coat venison in the flour mixture, and shake off excess. Brown the venison in the oil, over medium high heat, until brown on both sides.

Mix the remaining ingredients together, and pour over the browned venison. Reduce the heat, and simmer until the meat is tender (1 - 1 1/2 hours).
