AB's Broiled (Peel & Eat) Shrimp

The is Alton Brown's method or recipe for cooking shrimp for a shrimp cocktail. It is a quick, easy, and delicous method for putting shrimp on the plate quickly.

2 lbs medium (21-25 count) shrimp, deviened

1 tbsp olive oil
Old Bay or Cajun seasoning

Brine:
1/4 cup kosher salt
1/4 cup sugar
1 cup water
2 cups ice


Mix brine ingredients in a medium size mixing bowl. Add the cleaned shrimp to the brine, and place in the refridgerator for 25 minutes (if you let them go longer the 25 minutes that start getting pretty salty).

Place empty baking sheet or broiler pan under broiler preheat for 5 minutes.

Remove shrimp from brine and drain thoroughly and dry on paper towels. Place the shrimp back in mixing bowl. Toss with olive oil and seasoning. Place shrimp onto hot broiler pan (shrimp will sizzle) and place back under broiler for 2 minutes, then flip to other side and broil for another 1 minute. Transfer cooked shrimp to container and refrigerate until completely chilled. Serve with cocktail sauce.
