Broiled Redfish Fillets

This is another of Justin Wilson's recipes, and I have used a couple of times on Texas redfish with delicious results.


2 Redfish fillets (about 1 lb each)
1 stick butter or margarine
1 tbls lemon juice
1/2 tsp onion powder
1 tbls parsley flakes
1 large bay leave
salt, to taste (start with 1/2 tsp)
hot sauce, to taste

Melt butter or margarine in small sauce pan. Add lemon juice, onion powder, parsley flakes, bay leave, salt, and hot sauce to the melted butter. Simmer for 5 minutes to blend flavors well, then remove bay leave.

Coat baking dish with non-stick spray, and place fillets in dish. Brush fillets with half of the butter mixture.

Broil fish fillets at high heat 4 to 6 inches from the heat source for 10 minutes. Remove and brush with the rest of the butter mixture. Continue to cook until fish flakes easily, about 5 to 10 more minutes.
