This is a recipe from the Paula Dean cooking show.
We had yellow squash in the fridge and more growing in the garden.
So we were looking for new ways to use it, and this looked pretty
good on the TV. It turned out excellent. It has become one of
our favorite ways to fix squash. We even buy yellow squash just
to make this dish. Be sure to give it a try too.

6 medium yellow
squash, thinly sliced
1 large sweet onion, thinly sliced
1 tablespoon oil
1 tablespoon butter
1/2 cup grated Parmesan |
1 cup sharp cheddar cheese,
shredded
1/2 cup sour cream
Salt and freshly ground black pepper
3/4 sleeve Ritz crackers, crushed

Heat the oil in a large skillet over medium heat.
Saute the squash, onion, and butter until soft. Transfer
to a bowl and stir in the Parmesan, Cheddar, and sour
cream. Add salt and pepper, to your taste.
Place the mixture in a greased 2 quart casserole
dish and sprinkle the cracker crumbs evenly over
the top. Bake in a preheated 350 degree oven for
20 minutes, or until the top is golden and bubbly.
