Cliff's Standard House Seasoning
( Back to Cookbook Main Menu | Back to Misc Recipes | Back to Spice Mixtures )

This is our everyday house season mix. We use it on many things that we cook. It makes a great rub for any meat or fish, and works well in soups or other savory dishes.

You will note that there is very little salt in this mix. I prefer to judge the amount of salt needed by what we are cooking, and add the salt directly to the food.

If you don't have the guajillo powder (we grind our own from dried guajillo chiles) you can substitute any red powdered hot peppers or chiles like one from New Mexico.

1 1/2 tbls onion powder
1 1/2 tbls garlic powder
1 1/2 tbls paprika
1/2 tsp fine ground black pepper
1 tsp course ground black pepper
1/4 tsp white pepper
1/4 tsp cayenne pepper
1/4 tsp guajillo hot chile powder
3/4 tsp salt
1/4 tsp celery salt
1/3 tsp powdered worcestershire sauce
1/3 tsp dry ground yellow mustard
1/8 tsp ground thyme

Mix all the ingredients well, and store in an air-tight container.

Note: Recently I have started using half regular paprika and half smoked paprika in this mix, and we really like the change.
