Corn Casserole

The is an easy to prepare and great side dish for pot luck lunches and dinners. Anna last fixed this dish at her Topping family reunion in Oklahoma, and it was a big hit.


1 can cream corn
1 can whole kernel corn
1 egg, beaten
1 cup butter, melted
1 cup sour cream
1 small box Jiffy Corn Muffin Mix

Preheat the oven to 375 degrees.

Mix all the ingredients together in a large bowl, and then turn into a well buttered 9 x 13 in baking dish. Bake for 30 minutes, or until the edges turn golden brown and the center is firm. Serve warm.

Cliff Note: This can be made ahead of time, and frozen. Then thaw and bake.
