This is one of the all time most requested dishes
for Anna to bring to any pot-luck or gathering of people. It's
a specialty of Anna's. There is always very little, if any, left.

1 large head of
lettuce, torn in small pieces
1 can of ranch style beans, rinsed well
1 large bell pepper, cut into 1/4" pieces
2 medium tomatoes, cut into 1/4" pieces |
1 medium onion, chopped into
1/4" pieces
2 cups of cheddar cheese, shredded
1 small bottle of Catalina salad dressing
1 bag Fritos corn chips, crushed into small pieces |
Tear up the lettuce and cut up salad vegetables, and
place into large bowl. Open the can of beans and rinse
bean juice off of beans. Add beans to vegetables.
Cover with shredded cheddar cheese. The salad can
be prepared ahead of time to this point.
When ready to serve, add the Catalina dressing
and crushed corn chips to bowl and toss the salad.
The Fritos will become soggy with any leftover
salad so I only prepare this for large gatherings
where almost all can be consumed at a meal.
Note: Anna usually uses the "husband pleasing"
style ranch beans.
