Dad's Favorite Oatmeal Cookies

As the name says, this is Anna's father's favorite cookie of all time. To the rest of us it is a very moist, and very good oatmeal - raisin cookie.


2 eggs, beaten
1 cup sugar
3/4 cup shortening
1 cup cooked raisins (reserve 1/4 of liquid)
1/4 tsp salt
1 tsp baking soda
2 cups oats (fine)
2 cups flour
2 tsp vanilla

Mix the baking soda with the reserved raisin liquid.

Cream the sugar and shortening together. Add in the eggs and mix. Add the raisins, and soda/raisin-juice mixture while the liquid is still warm. Add all other ingredients and mix well. Drop by teaspoonful onto un-greased cookie sheet. Cook 10-12 minutes at 350.

NOTE: For variety add pecans or coconut.
