Frances' Pancakes

These were the pancakes that everyone who grew up in the Hamilton home ate, and loved! They make great dollar sized pancakes too. The trick to cooking these is to let the pan heat up until a drop of water "dances" around of the surface, then start cooking the pancakes (on oil).


2 cup flour
2 tbls baking powder
1 egg
1 1/2 cup milk
1/2 tsp salt
2 tbls sugar
2 tbls shortening

Beat the egg in a mixing bowl. Add the milk, salt and sugar. Mix well with blender, and add remaining ingredients. Continue blending until the batter is almost smooth (a few small lumps are fine).

Pour onto a hot griddle, and allow the pancake to cook until large bubbles form on the top. Then flip and cook the other side until golden brown.
