Fresh Strawberry Pie

This recipe was acquired by Frances' Hamilton from an old cook at Shoney's Big Boy Restaurant many decades ago. It was one of their specially dessert dishes back then.

If you like strawberries, you will love this pie! It was always, always a hit every time mom served it.


2 cups fresh strawberries, cleaned and sliced
1 cup sugar
1 cup water
4 tbls cornstarch
3 tbls strawberry Jello
a few of drops of red food coloring
1 chilled 9" pie shell, pre-cooked

Mix the cornstarch and sugar together, blending well. Add the water and cook until clear and thick. Add the strawberry Jello and a few drops food coloring to mixture.

Pour 1 cup of strawberries into this mixture. Pore the other cup of berries directly into the baked and cooled pie crust. Pour the strawberry mixture over the berries in the pie shell.

Chill the pie 30 minutes in the refrigerator, and top with Cool Whip or Whipped Cream.
