Frances' Banana Bread

This is the banana bread that we grew up on. I don't remember Mom making this often, but I enjoyed it when she did. It was more of a special holiday treat, than a normal desert. Great spread with warm butter, and eaten with a cold glass of milk.

2 cups all purpose flour
1/4 tsp salt
1 stick margarine or butter
1 cup sugar
2 egg, separated
2 ripe bananas, mashed
1/2 cup buttermilk
1 tsp baking soda

Cream the margarine and sugar together with a mixer. Add the separated egg yokes, mashed bananas, buttermilk, and baking soda. Mix well. Stir in the flour, and combine well.

Beat the separated egg whites until they form soft peaks. Gently fold the whipped egg whites into the batter. Pour the finished batter into a buttered loaf pan.

Bake at 350 degrees for 50 to 60 minutes, or until a skewer comes out clean.

Have a clean dish towel ready, sprinkled with powdered sugar.
