Mom's Christmas Date-Nut Balls
( Back to Cookbook Main Menu | Back to Desserts | Back to cookie Recipes )

Mom used to make these every Christmas (hense the name). No one in the family ever got her original recipe. But after much research and taste testing, I found the recipe again. I am sure that this is the same recipe. Anna made them for me this year, and from now on they will again be a Christmas tradition at our home.

If you like dates, then please give these a try. They are delicious! They're also very rich and quite sweet. So get a big glass of cold milk and enjoy!

1 cup brown sugar
1/2 cup butter
1 cup chopped dates
1 egg, beaten

1 cup chopped pecans
1 tsp vanilla
2 cup Rice Krispies
1 cup shredded coconut

Mix first 5 ingredients and cook slowly until thick and the dates dissolve (about 10 minutes). Remove from heat, and add the vanilla and Rice Krispies, mix well and let cool.

When the mixture is still a little warm, coat your hands with butter or margarine and roll into balls. Drop the ball into a shallow dish filled with the coconut, and roll to coat the ball with the coconut.
