Brenda's Peanut Butter No Bake Cookies
( Back to Cookbook Main Menu | Back to Desserts | Back to cookie Recipes )

I don't know who Brenda is. But Anna's mom made these during Christmas this year, and they were a hit. Our daughter loved them, so we got the recipe. Now you can make them too.

Try to work fairly quickly after removing from heat, because the cookies start to setup as it cools.

3/4 cup white syrup
3/4 cup peanut butter
1/4 stick butter

3/4 cup sugar
2 cups Rice Krispies
2 cups corn flakes

Line a baking sheet or sheet pan with waxed paper.

Heat the corn syrup and sugar in a saucepan over medium heat. When hot, stir in butter and peanut butter until thoroughly mixed, and remove the pan from heat.

Mix the corn flakes and Rice Krispies in a large heat-restraint bowl, then pour the peanut butter mixture over the cereal. Stirring until the cereal is well coated with the mixture. Drop by tablespoon onto the waxed paper; flatten slightly if desired. Allow to cool before serving.

Options: Add a little shreaded coconut, chopped nuts, or a couple of tablespoons of cocoa powder.
