Potato Bread Hot Rolls

This was Mom's favorite hot rolls recipe. She would cut them out with a biscuit cutter, and then partially fold them over before letting them rise. I still fondly remember these as one of my favorite parts of the meal, when Mom fixed them. They are melt in your mouth warm and delicious!


flour (approx. 4 cups)
1/2 tsp baking soda
1 tsp baking powder
1/2 cup sugar
1/2 cup mashed potatoes, fresh preferred
2 cups scalded milk, cooled
1/2 cups shortening, unmelted
1 tbls salt
1 pkg quick rise yeast
1/4 cup warm water

Scald the milk, and let it cool. When the milk is cool to the touch, add all the remaining ingredients, except the flour, and mix well. Add enough flour to make a soft (almost pancake like batter) dough. Beat well. Cover and allow mixture to rise until it doubles in bulk

Now, add in enough flour to make the dough stiff enough to handle. Turn dough out on to a floured work surface, and knead for about 5 minutes.

Roll out and cut into desired shape. Place rolls on a greased pan, cover and allow them to rise in a warm spot for about 30 minutes. Bake until brown. Unused dough can be stored in a covered bowl in the refrigerator.
