Sauted Orange-Ginger Spiced Carrots

Here's another original. I made these up one day when I was making an Asian style main dish, and was looking for something to go with it. We also make a similar, but oven roasted variety. Both are delicious.


1/4 lb baby carrots
4 tbls frozen orange juice concentrate
3 tbls Sprite
1/2 tsp sugar
1/4 tsp ginger (fresh or freeze dried)
1 pinch (1/16 tsp) cayenne pepper

Blanch the carrots in boiling water for 5 minutes to partially cook them, and then remove from the heat to cool.

Combine orange juice concentrate, Sprite, sugar, ginger, and cayenne pepper, in a small saute pan. Mix together well. Add the carrots. Cook over medium heat until the liquid thickens and the carrots finish cooking. Serve.

Cliff Note: If you don't have the Sprite, just use water. But add an extra 1/2 tsp of sugar.
