White Mountain Icing

Another wonderful, and much loved, recipe from Emma Ward's family collection.


1/2 cup sugar
2 tbls water
1 tsp vanilla

1/4 cup corn syrup
1/4 cup egg whites (2 eggs)

Blend the sugar, corn syrup, and water together. Rapidly boil this mixture until it spins a thread 6 to 8 inches.

Beat the egg whites to stiff peaks. Pour the hot syrup mixture into the beaten egg whites, using a stead stream, and beating constantly until the icing stands in very stiff peaks. Blend in the vanilla.
