Best-Ever Banana Muffins

The name says it all. There are wonderful. Anna found this recipe in a cookbook that we have that specializes in breakfast and brunch foods. We happened to have some very ripe bananas. So it was a perfect time to try these muffins. Anna has made these regularly since finding the recipe.

These muffins are not your standard banana bread. They are much lighter and richer than the old fashion banana bread. And their much better too. You'll also notice that there are no nuts in this recipe.


3 large ripe bananas
3/4 cup sugar
1 egg, slightly beaten
1/3 cup melted butter
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 cups all-purpose flour

Preheat the oven to 375 degrees.

Spray your muffin pans with non-stick spray, or insert paper baking cups.

Peel the bananas, and mash in a large mixing bowl. Add the sugar and egg, and blend with a mixer. Continue mixing, and add the melted butter. When this is blended well add the rest of the dry ingredients, and continue mixing.

Pour the batter into the muffin cups, and bake for 20 minutes.
