Emma's Pumpkin Pie

This is one of Anna's family favorites (Emma is Anna's mom). The is a much lighter pumpkin pie than the standard. It really more of a pumpkin custard pie. And it's delicous!


3 eggs
1 cup sugar
1 tbls vanilla
1 tsp salt
1 cup cooked pumpkin pulp
1 cup whole milk
1 tbls nutmeg
1/2 tsp cinnamon
1 uncooked 9" pie crust (see recipe)

Beat the eggs in a bowl. Add the sugar, vanilla, salt, and the other spices. Add the cooked pumpkin and the milk. Pour into the uncooked pie shell (more milk may be added to fill the pie to the desired level).

Bake at 350 for 45-60 minutes, or until done. The pie is done when the middle of the pie shakes like firm jello.
