Spoon Bread

This wasn't something that Mom made often. She found this recipe when I was a teenager. We did like this very much when it was fixed.


4 cups self-rising flour
1 pkg dry yeast
2 tbls warm water
2 cups warm water
1/4 cup sugar
1 egg
3/4 cup vegetable oil

Dissolve the yeast in the 2 tablespoons of warm water (about 110 degrees). Let this stand for a few minutes to let the yeast bloom.

Combine all remaining ingredients. Spoon into greased muffin tins. Bake for 15-20 minutes in a 400 degree oven.
